Fresh Coastal Tilapia Ceviche

Light, citrusy, and packed with flavor. This Tilapia Ceviche is the ultimate refreshing meal for sunny afternoons.
Ingredients
1.5 lbs Fresh Tilapia Fillets (from Three Brothers Seafood), cut into ½ inch cubes
1 cup Freshly squeezed Lime Juice
½ cup Red Onion, finely julienned
1 cup Roma Tomatoes, seeded and diced
1 Serrano or Jalapeño pepper, seeded and minced
½ cup Fresh Cilantro, chopped
1 tbsp Extra Virgin Olive Oil (optional for silkiness)
Salt and Pepper to taste
1 Large Avocado, diced or sliced for topping
Crispy Tostadas or Tortilla Chips for serving
Instructions
1. The Citrus Cure
Place the tilapia cubes in a glass or ceramic bowl (avoid metal to prevent a metallic taste). Pour the lime juice over the fish until it is completely covered. Cover with plastic wrap and refrigerate for about 15 to 20 minutes. The fish should look opaque and white when "cooked" by the acidity.
2. Add the Aromatics
Once the fish is cured, drain about half of the lime juice if you prefer a less "soupy" ceviche. Add the red onion, tomatoes, minced peppers, and cilantro.
3. Season and Shine
Drizzle the olive oil (if using) and season with salt and pepper. Gently toss all the ingredients together to ensure the flavors are well combined without breaking the delicate fish cubes.
4. The Finishing Touch
Let the ceviche sit in the fridge for another 5 minutes to let the flavors marry. Right before serving, top with fresh avocado slices.
5. Serve and Enjoy
Serve chilled with tostadas or salty crackers. For an extra kick, add a dash of your favorite hot sauce!
