The ultimate refreshing seafood treat. Sweet, savory, and tangy—our Mexican Shrimp Cocktail (Coctel de Camarones) brings the flavor of the coast right to your table.
Ingredients
1.5 lbs Large Shrimp (from Three Brothers Seafood), peeled and deveined
1 cup Tomato juice (like Clamato or V8)
½ cup Ketchup
¼ cup Fresh lime juice
1 tsp Hot sauce (like Valentia or Cholula), or to taste
½ tsp Worcestershire sauce
1 Large Roma tomato, finely diced
½ Red onion, finely chopped
1 English cucumber, diced
1 Jalapeño, seeded and minced (optional)
½ cup Fresh cilantro, chopped
1 Large Avocado, diced
Salt and Black Pepper to taste
Saltine crackers or Tortilla chips for serving
Instructions
1. Cook the Shrimp
Bring a pot of salted water to a boil. Add the shrimp and cook for only 2 to 3 minutes until they turn pink and opaque. Drain immediately and plunge them into an ice bath to stop the cooking process. This ensures they stay firm and "snappy."
2. Prepare the Cocktail Base
In a large bowl, whisk together the tomato juice, ketchup, fresh lime juice, hot sauce, and Worcestershire sauce. This creates that signature sweet and tangy Mexican-style "coctel" sauce.
3. Mix in the Freshness
Add the chilled shrimp, diced tomato, red onion, cucumber, jalapeño, and cilantro to the sauce. Gently toss everything until well combined. Season with salt and pepper to taste.
4. Chill and Marinate
For the best flavor, cover and refrigerate the cocktail for at least 30 minutes. This allows the shrimp to absorb the zesty flavors of the sauce.
5. Serve and Garnish
Fold in the diced avocado just before serving to keep it fresh and green. Serve in a tall glass or a bowl with plenty of saltine crackers or crispy tortilla chips on the side. Don't forget an extra lime wedge!
